Chocolate Cornflake Crunchies

Many years ago, I created this recipe to go with a children’s yoghurt pudding. It is a slight variation to a flapjack.

Ingredients

butter: 225g
plain flour: 140g
cocoa: 15g
granulated sugar: 140g
desiccated coconut: 85g
crushed corn flakes: 70g
chocolate, milk or plai: 50g

Directions:

  1. Prepare oven 180C, Gas mark 4
  2. Sift the flour and baking powder together.
  3. Melt butter in a large pan over a low heat. Remove from heat and add sugar, coconut and cornflakes stirring well.
  4. Gradually mix in sifted cocoa and flour. Combine well.
  5. Spread the mixture into a greased 20 cm square baking tin, spreading evenly with a spoon
  6. Bake for 25-30 minutes until firm around the edges
  7. Mark into squares and leave to cool
  8. Drizzle with melted chocolate when cold
