Festive Chocolate Tiffin


Ideal for those who don't like mince pies or Christmas cake, this cake is quick and easy to make. It stores well and can be frozen.

milk chocolate or dark chocolate or mixed: 300g
butter: 100g
golden syrup: 70g
crisp amaretti biscuits, broken into small pieces: 250g
dried cranberries: 100g
chopped Brazil nuts: 50g
chopped glacé cherrie: 50g
marzipan, chopped into small dice: 50g
Tia Maria (optional): 1tbsp


  1. Place butter and chocolate into a plastic bowl and melt slowly in the microwave, stirring gently occasionally.
  2. Add both syrups and Tia Maria if using, and fold through the chocolate mix
  3. Fold through the fruit, nuts, marzipan and amaretti. Mix well to combine.
  4. Place the mixture into a 20cm baking tin and lightly flatten. Place into the fridge to set. Once set, cut into the required size and serve.
  5. It can be cut into small pieces to be used as petits fours after your Christmas dinner or larger pieces for teatime.
