Gluten-Free Apple Cake


With more people now becoming gluten intolerant there is a big demand for gluten-free recipes.
This apple cake is quick and easy to bake for any surprise guests and can also be made with gluten-free self-raising flour for a healthier version.

Wholemeal Gluten Free Self-Raising Flour: 250g
Butter: 115g
Soft Brown Sugar: 115g
Raisins: 60g
Egg: 1
Cinnamon: 1tsp
Milk: 6-8
Eating Apples, Peeled And Chopped Into 1cm Chunks: 250g
Demerara Sugar: 50g


  1. Line an 8-9” tin, or 9 shallow muffin tray.
  2. Rub the cinnamon and butter into the flour to fine breadcrumb stage.
  3. Stir in the sugar and add liquid to make a sticky dough.
  4. Mix in the apple and raisins.
  5. Sprinkle with brown sugar before cooking.
  6. Put into tins and bake at 150C/ 300F gas mark 2 for 40 minutes for a large cake, 30mins for the individual ones.
  7. TIP Converting a round cake to a square one - To convert a recipe that calls for a round cake tin to a square, just decrease the tin size by 1inch. So an 8inch round cake will fit into a 7inch square tin.
