Quark American Pancake Bake with Turkey and Spinach


This dish can be made ahead and kept in the fridge for 24 hours, ready to bake. You can vary the filling - prawn and mushroom in a creamy sauce or for a vegetarian option try broccoli, pine nut and     Stilton. Quark is a fantastic baking ingredient and is low in both calories and fat and high in protein.

Eggs (separated): 2
Quark: 50g
Semi-skimmed milk: 80ml
Baking powder: 1/4 tsp
Plain flour: 100g
Salt: Pinch
Chopped mixed dried herbs or 2 tbsp chopped fresh parsley: 1tbsp
Olive oil: 1tbsp
Turkey and Spinach:
Olive oil: 1 teaspoon
Onion, chopped: 1
Cloves garlic, crushed: 2
Minced turkey breast: 500g
Passata: 200ml
Tablespoons chopped basil: 2
Ground black pepper: Pinch
Red chilli flakes or 1 small red chilli, seeds removed if wanting a milder dish: 1/2 tsp
Finely chopped fresh spinach: 150g
Quark: 200g
Ground nutmeg: 1/4 teaspoon
Finely grated mature cheddar cheese: 150g
